Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the soft salted butter and melted coconut oil. Add brown sugar and granulated sugar; mix until well combined.
- Incorporate two large eggs, egg yolk, and tablespoon of vanilla extract into the mixture. Stir until completely blended.
- In a separate bowl, whisk together old-fashioned oats, all-purpose flour, baking soda, and salt. Gradually add this dry mix to the wet ingredients, stirring until just combined.
- Gently fold in the semi-sweet chocolate chips and chopped dark chocolate until evenly distributed in the dough.
- Roll the dough into rounded tablespoon-sized balls and place them on the prepared baking sheet, spaced about 2 inches apart.
Baking
- Bake in the preheated oven for 6 minutes. After 6 minutes, rotate the pan and gently tap it on the counter one time. Continue baking for an additional 2 to 3 minutes, until the edges are set and the centers are slightly glossy.
- Allow cookies to cool on the baking sheet for a few minutes to finish cooking before transferring to a wire rack.
- Sprinkle with flaked sea salt just before they cool completely for that perfect salty-sweet bite!
Notes
If you prefer a dairy-free option, use vegan butter in place of the salted butter. For additional flavor, consider adding a scoop of your favorite nut butter!
