  • 1/2 cup 1/2 cup coconut oil, melted
Sugars

  • 2 1/2 cups 2 1/2 cups old-fashioned oats
  • 2 cups 2 cups all-purpose flour
  • 2 teaspoons 2 teaspoons baking soda

Chocolate
  • 1 cup 1 cup semi-sweet chocolate chips or chunks
  • 1 cup 1 cup chopped dark chocolate
Finishing Touch

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the soft salted butter and melted coconut oil. Add brown sugar and granulated sugar; mix until well combined.
  3. Incorporate two large eggs, egg yolk, and tablespoon of vanilla extract into the mixture. Stir until completely blended.
  4. In a separate bowl, whisk together old-fashioned oats, all-purpose flour, baking soda, and salt. Gradually add this dry mix to the wet ingredients, stirring until just combined.
  5. Gently fold in the semi-sweet chocolate chips and chopped dark chocolate until evenly distributed in the dough.
  6. Roll the dough into rounded tablespoon-sized balls and place them on the prepared baking sheet, spaced about 2 inches apart.
Baking
  1. Bake in the preheated oven for 6 minutes. After 6 minutes, rotate the pan and gently tap it on the counter one time. Continue baking for an additional 2 to 3 minutes, until the edges are set and the centers are slightly glossy.
  2. Allow cookies to cool on the baking sheet for a few minutes to finish cooking before transferring to a wire rack.
  3. Sprinkle with flaked sea salt just before they cool completely for that perfect salty-sweet bite!

Notes

If you prefer a dairy-free option, use vegan butter in place of the salted butter. For additional flavor, consider adding a scoop of your favorite nut butter!
