  • 1 teaspoon vanilla extract (for batter)

Preparation
  1. Preheat your oven: Set it to 350°F (175°C) so the heat is ready for your cobbler.
  2. Melt the Butter: Place 6 tablespoons of unsalted butter into a 9×13-inch baking dish. Allow it to melt in the preheated oven.
  3. Prepare the Peaches: In a large bowl, mix the sliced peaches with 3/4 cup of granulated sugar, light brown sugar, lemon juice, vanilla extract, ground cinnamon, optional nutmeg, and cornstarch. Let it sit for 10 minutes to allow the sugars to draw out the peach juices.
  4. Make the Batter: In a separate bowl, whisk together the flour, baking powder, salt, and 3/4 cup of granulated sugar. Gradually add in the milk and 1 teaspoon of vanilla extract, mixing until just combined; avoid over-mixing.
Assembly and Cooking
  1. Combine Batter and Peaches: Pour the batter into the baking dish over the melted butter—do not stir. Spoon the peach mixture evenly over the batter without stirring again.
  2. Bake to Perfection: Place in the oven and bake for 45 to 55 minutes until the top is golden brown and the fruit bubbles around the edges.
  3. Cool and Serve: Allow to cool for 10 to 15 minutes before serving warm, preferably with a scoop of vanilla ice cream or whipped cream.

Notes

For maximum flavor, use European-style butter. For a healthier version, consider using sugar alternatives, adding seeds, or increasing the amount of peaches. Enhance flavors with optional spices like bourbon or nutmeg.
