Preparation
- Preheat your oven to 400 degrees F and line a large roasting pan with foil for easy cleanup.
- In a large bowl, whisk together olive oil, honey, soy sauce, lime juice, brown sugar and the rest of the marinade ingredients until smooth and well combined.
- Pat the chicken pieces dry using paper towels, then toss them in the marinade until fully coated. Cover the bowl and refrigerate for at least 1 hour or up to 8 hours for maximum flavor.
- Scatter the sliced bell peppers and onions in the prepared roasting pan, then arrange the marinated chicken on top, skin-side up. Pour any leftover marinade over the chicken for extra flavor.
Cooking
- Bake uncovered for 40 to 50 minutes, or until the chicken is deep golden brown and an instant-read thermometer reads 165 degrees F at the thickest part.
- Allow the chicken to rest for 5 minutes before serving with the roasted veggies and pan juices for an extra flavor boost.
Notes
For extra crunch, the air fryer is also a great way to revive leftovers. Avoid microwaving to prevent soggy chicken.
