Ingredients
  

Chicken
  • 3 pounds chicken drumsticks and wings Opt for organic for best flavor and texture.
Vegetables
  • 1 medium red bell pepper, sliced into strips
  • 1 medium green bell pepper, sliced into strips
  • 1 small yellow onion, sliced
Marinade
  • 3 tablespoons olive oil
  • 3 tablespoons honey Use raw, unfiltered for maximum taste.
  • 2 tablespoons soy sauce Low-sodium option is recommended.
  • 1 tablespoon fresh lime juice
  • 1 tablespoon brown sugar Can be substituted with monk fruit sweetener.
  • 4 cloves garlic, minced
  • 1.5 teaspoons ground allspice
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon cayenne pepper Adjust to taste for spice level.
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground nutmeg

Method
 

Preparation
  1. Preheat your oven to 400 degrees F and line a large roasting pan with foil for easy cleanup.
  2. In a large bowl, whisk together olive oil, honey, soy sauce, lime juice, brown sugar and the rest of the marinade ingredients until smooth and well combined.
  3. Pat the chicken pieces dry using paper towels, then toss them in the marinade until fully coated. Cover the bowl and refrigerate for at least 1 hour or up to 8 hours for maximum flavor.
  4. Scatter the sliced bell peppers and onions in the prepared roasting pan, then arrange the marinated chicken on top, skin-side up. Pour any leftover marinade over the chicken for extra flavor.
Cooking
  1. Bake uncovered for 40 to 50 minutes, or until the chicken is deep golden brown and an instant-read thermometer reads 165 degrees F at the thickest part.
  2. Allow the chicken to rest for 5 minutes before serving with the roasted veggies and pan juices for an extra flavor boost.

Notes

For extra crunch, the air fryer is also a great way to revive leftovers. Avoid microwaving to prevent soggy chicken.
