Ingredients
  

For the Crust
  • 36 cookies Golden Sandwich Cookies
  • 8 tablespoons unsalted butter, melted
  • 1/4 teaspoon fine sea salt optional
For the Cream Cheese Layer
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 2 tablespoons fresh lemon juice
  • 2 cups whipped topping, thawed
For the Strawberry Layer
  • 1 3-ounce box strawberry gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 1/2 cups whipped topping, thawed
  • 1 1/2 cups fresh strawberries, finely chopped
For the Topping
  • 2 cups whipped topping, thawed
  • 1 1/2 to 2 cups fresh strawberries, sliced

Method
 

Prepare the Crust
  1. Crush the golden sandwich cookies in a food processor until they resemble fine crumbs.
  2. In a bowl, mix the crumbs with melted butter and salt (if using).
  3. Press this mixture firmly into the bottom of a 9×13-inch dish to form a solid crust. Chill to firm up.
Make the Cream Cheese Layer
  1. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  2. Gradually blend in powdered sugar, vanilla extract, and lemon juice until well combined.
  3. Gently fold in 2 cups of thawed whipped topping until light and fluffy.
  4. Spread this cream cheese mixture evenly over the chilled crust and place back in the refrigerator to set.
Create the Strawberry Layer
  1. In a medium bowl, whisk the strawberry gelatin with boiling water until completely dissolved.
  2. Stir in the cold water, then let the mixture cool until it slightly thickens.
  3. Once thickened, fold in 1 1/2 cups whipped topping and the finely chopped strawberries.
  4. Spread this colorful layer over the cream cheese layer and refrigerate to set.
Final Layer
  1. Once the strawberry layer is firm, gently spread the remaining whipped topping over the top.
  2. Chill for at least 4 hours or overnight for optimal flavor melding.
Serving Preparation
  1. Before serving, top with sliced strawberries for a vibrant finish.
