  • 2 large Yellow Onions, peeled and sliced into half-rings, about 1/4-inch thick
Cooking Fat
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C); this temperature is key for achieving that perfect roast.
  2. Grease a large baking pan or roasting pan with cooking spray.
  3. Rinse the Yukon Gold potatoes under cold water, then cut them into 1 1/2-inch chunks. Pat them dry with paper towels.
  4. Peel and slice the onions into half-rings; about 1/4-inch thick.
Mixing and Roasting
  1. In a large bowl, whisk together melted butter, olive oil, garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and black pepper.
  2. Add the potatoes and onions to the bowl and toss until they are evenly coated.
  3. Spread the mixture in a single layer in the prepared pan.
  4. Roast for 25 minutes, then stir and flip the potatoes and onions.
  5. Return to the oven and roast for an additional 18 to 20 minutes until golden brown and fork-tender.
  6. Serve immediately, garnishing with fresh chopped parsley if desired.

Notes

Consider adding leafy greens in the last 10 minutes of roasting for added fiber. For the best flavor, use fresh herbs where possible.
