Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Fit the pie crust into a deep-dish pie pan and refrigerate while preparing the filling.
  3. In a heavy-bottomed cast iron skillet, cook the bacon over medium heat until crispy. Transfer the bacon to a paper towel-lined plate, reserving 2 tablespoons of drippings in the skillet.
  4. Add the diced onion to the drippings in the skillet and cook over medium-low heat for 20-25 minutes, stirring occasionally, until caramelized and golden brown.
Assembly
  1. In a medium bowl, whisk together eggs, heavy cream, salt, and black pepper until smooth.
  2. Stir in 1 3/4 cups of cheese, cooked bacon, and caramelized onions until well combined.
  3. Pour the egg mixture into the prepared pie crust, spreading evenly, and sprinkle with the remaining cheese on top.
Baking
  1. Bake for 50-55 minutes, or until the quiche is set and golden brown on top.
  2. Allow the quiche to rest for 15 minutes before slicing.
  3. Garnish with green onions if desired and serve warm.

Notes
