Preparation
- Preheat your oven to 350°F (175°C).
- Fit the pie crust into a deep-dish pie pan and refrigerate while preparing the filling.
- In a heavy-bottomed cast iron skillet, cook the bacon over medium heat until crispy. Transfer the bacon to a paper towel-lined plate, reserving 2 tablespoons of drippings in the skillet.
- Add the diced onion to the drippings in the skillet and cook over medium-low heat for 20-25 minutes, stirring occasionally, until caramelized and golden brown.
Assembly
- In a medium bowl, whisk together eggs, heavy cream, salt, and black pepper until smooth.
- Stir in 1 3/4 cups of cheese, cooked bacon, and caramelized onions until well combined.
- Pour the egg mixture into the prepared pie crust, spreading evenly, and sprinkle with the remaining cheese on top.
Baking
- Bake for 50-55 minutes, or until the quiche is set and golden brown on top.
- Allow the quiche to rest for 15 minutes before slicing.
- Garnish with green onions if desired and serve warm.
Notes
