  • 1 box 3 oz box of orange gelatin
  • 1.5 cups boiling water
  • 1 box 3.4 oz box of dry instant vanilla pudding mix
  • 1 tub 8 oz tub of thawed whipped topping For creamier texture, use a brand with minimal stabilizers.
  • 1 can 15 oz can of mandarin oranges (well drained) Fresh oranges segments can be used for higher nutritional value.
  • 1 can 20 oz can of crushed pineapple (drained well)
  • 2 cups mini marshmallows
  • 1 tsp vanilla extract (optional) Enhances flavor.
  • 1 tbsp orange zest (optional) Enhances flavor.

Method
 

Preparation
  1. In a large mixing bowl, whisk together the orange gelatin powder and boiling water for about 1 minute until it's fully dissolved.
  2. Allow the mixture to cool at room temperature for about 10 minutes. Then, refrigerate for an additional 10 to 15 minutes until cool but not set.
  3. Once cooled, sprinkle the dry instant vanilla pudding mix over the gelatin mixture. Whisk for 1 to 2 minutes until smooth and slightly thickened.
  4. Gently fold in the thawed whipped topping until fully combined with no streaks remaining.
  5. Fold in the drained mandarin oranges, drained crushed pineapple, and mini marshmallows until evenly distributed.
  6. If desired, mix in the vanilla extract and orange zest to enhance flavor.
  7. Cover and refrigerate for at least 2 hours or until thick and scoopable. Stir gently before serving.

Notes

For serving, showcase in clear glass bowls. Ideal for picnics, BBQs, or gatherings. Can be made a day in advance for better flavor meld.
