Preparation
- In a large mixing bowl, whisk together the orange gelatin powder and boiling water for about 1 minute until it's fully dissolved.
- Allow the mixture to cool at room temperature for about 10 minutes. Then, refrigerate for an additional 10 to 15 minutes until cool but not set.
- Once cooled, sprinkle the dry instant vanilla pudding mix over the gelatin mixture. Whisk for 1 to 2 minutes until smooth and slightly thickened.
- Gently fold in the thawed whipped topping until fully combined with no streaks remaining.
- Fold in the drained mandarin oranges, drained crushed pineapple, and mini marshmallows until evenly distributed.
- If desired, mix in the vanilla extract and orange zest to enhance flavor.
- Cover and refrigerate for at least 2 hours or until thick and scoopable. Stir gently before serving.
Notes
For serving, showcase in clear glass bowls. Ideal for picnics, BBQs, or gatherings. Can be made a day in advance for better flavor meld.
