  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • cup dark brown sugar (packed) Choose organic for a more robust flavor.
  • 2 tablespoons unsalted butter (melted)
Flavorful Glaze
  • 1 tablespoon soy sauce Use tamari for a gluten-free option.
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon ground cinnamon

Method
 

Preparation
  1. Remove the pork chops from the refrigerator 20 to 30 minutes before grilling to allow them to reach room temperature.
  2. In a medium bowl, whisk together the dark brown sugar, melted butter, soy sauce, apple cider vinegar, Dijon mustard, smoked paprika, garlic powder, onion powder, cayenne pepper, and cinnamon until smooth and glossy.
  3. Transfer one-third of the glaze into a separate small bowl for a post-grill baste.
  4. Heat your grill to medium-high, around 400 to 450 degrees F. Clean and oil the grill grates.
  5. Pat the pork chops dry with paper towels. Drizzle both sides with olive oil and season with salt and pepper before brushing with the prepared glaze.
Grilling
  1. Place the pork chops on the grill over direct heat and cook for 4 to 5 minutes without moving them.
  2. Flip the chops, brush with additional glaze, close the lid, and continue to grill for another 4 to 5 minutes or until the internal temperature reaches 145 degrees F.
  3. Remove from grill, brush with reserved glaze, and allow to rest for 5 minutes before serving.

Notes

For a healthier option, consider using grass-fed pork and adding grilled vegetables as a side.
