  • 2 pounds baby potatoes or Yukon Gold potatoes, halved or quartered
  • 1 packet (1 ounce) Lipton onion soup mix
  • 4 tablespoons unsalted butter, cut into small pieces
  • 2 tablespoons olive oil Use extra virgin for better flavor.
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Method
 

Preparation
  1. Wash and dry the potatoes thoroughly, cutting larger Yukon Gold varieties into 1-inch pieces for even cooking.
  2. Place the prepared potatoes into the insert of your slow cooker, then drizzle 2 tablespoons of olive oil over them. Toss to coat evenly.
  3. Sprinkle the Lipton onion soup mix, garlic powder, black pepper, and salt over the potatoes. Continue tossing until they are well-coated.
  4. Evenly scatter the butter pieces on top of the seasoned potatoes.
Cooking
  1. Cover the slow cooker and cook on LOW for 4 to 5 hours or on HIGH for 2 to 2.5 hours until the potatoes are fork-tender.
  2. Toss gently before serving and garnish with fresh parsley if desired.

Notes

For a healthier version, substitute butter with avocado or vegan butter. To boost nutrition, add spinach or kale.
