Preparation
- Wash and dry the potatoes thoroughly, cutting larger Yukon Gold varieties into 1-inch pieces for even cooking.
- Place the prepared potatoes into the insert of your slow cooker, then drizzle 2 tablespoons of olive oil over them. Toss to coat evenly.
- Sprinkle the Lipton onion soup mix, garlic powder, black pepper, and salt over the potatoes. Continue tossing until they are well-coated.
- Evenly scatter the butter pieces on top of the seasoned potatoes.
Cooking
- Cover the slow cooker and cook on LOW for 4 to 5 hours or on HIGH for 2 to 2.5 hours until the potatoes are fork-tender.
- Toss gently before serving and garnish with fresh parsley if desired.
Notes
For a healthier version, substitute butter with avocado or vegan butter. To boost nutrition, add spinach or kale.
